Notes

6/1/2020 - Kegged - FG=1.000 - The champagne yeast still had a fruity wine-like character to it, which I thought would be more subtle. It may be slightly less than the 71-B yeast, but not much. Flavor was pretty clean and neutral though. Added 4oz Peach extract from RiteBrew and racked cider on top. Put in kegerator right away to chill and carb for the weekend.

6/4/2020 - Sampled - The peach flavor and aroma come through, but they remind me more of canned peaches than fresh. I much prefer the apricot extract I've used in the past, but RiteBrew didn't have any when I ordered. If I use peach again, I'll likely blend it with one or two other extracts in a batch to act as a supporting flavor rather than the primary. Still good though, and I can mix in the Amoretti extracts to taste in the glass.

6/12/2020 - Blew keg at a small birthday party. I'm going to have to start brewing double batches of this stuff since it seems to go so fast.
