Notes
11/30/2022 - Bought 8 gallons of RO water in bulk from Hy-Vee the day before and treated 5 gallons with 6 g of Calcium Chloride in the mash. Sparge water I will just leave as RO without modification. Checked PH after about 10 minutes into the mash with my new PH meter and I was a bit low at 4.9, so I added 1 g of Chalk (CaCO3) to the mash and stirred in. I took another reading after 10 minutes, but there wasn't really a change. I didn't calibrate the PH meter, so I should probably do that. I hit 1.048 for gravity pre-boil, so that was spot on. Boiled 30 minutes before adding bittering hops and continued to boil another 60 minutes. Chilled to 64 degrees in about 20 minutes. Transferred to All-Rounder and added lager yeast. I plan to ferment this under pressure after a couple days of initial fermentation.
12/1/2022 - I wasn't noticing much activity the morning after I brewed, so I decided to pitch another container of saved yeast and aerate with the mix-n-stir a bit. There was some CO2 coming out of solution it appears, so there may have been activity, but better safe than sorry.
12/9/2022 - Kegged - FG=1.010 - Flavor was malty but clean with light hop bitterness. The beer still had some haze and a bit of yeast in suspension, so I'm not sure if it's cleaner than my standard water batch or the cut water batch. Time will tell I suppose.
