9/15/2005 – Flavor is similar to my other wheat beers.  Not that great, but better than the others.  I would like to try making a wheat beer with a mixture of ½ wheat DME and ½ regular DME and see how that comes out.

9/01/2005 – Kegged, added 2 cans AJ concentrate and ½-1 lb honey, bottled 6 still

9/20/2005 - Tastes very good, friends like it, might try to add a little more sugar to up the alcohol content, wish I would have taken gravity readings for this one.

10/20/2005 - Almost gone, this ended up being a very inexpensive and great tasting beverage, will definately try again.

 


John Bull Stout (Modified Kit)

Extract:          3.75 lb hopped John Bull LME kit

                        1 lb. ID Carlson Light DME

                        1 lb. ID Carlson Dark DME

 

Hops:              1 oz. Fuggles – 3 min.

 

Other:             ½ cup Brown Sugar

Notes:

8/15/2005 – Started with 2 gallons water, boiled 23 minutes, added brown sugar for the last 15 min.  Added fuggles hops at 3 min.

8/22/2005 – Transferred to secondary - 1 peice airlock

9/11/2005 – Bottled 12 x 12oz bottles and kegged the rest – red stripe caps

10/20/2005 - Carbonated by shaking @ serving pressure a couple times a day, very smooth and dry, everyone at the halloween party liked it better than my lighter colored brew.

 


Mike's Honey Amber Ale

8/22/2005 – Brew Day – 1.5 gallon starting water, 1st time using the turkey fryer, first time making up my own recipe. Steeped grains @ 150 for 25 min, boiled for 60 min, added Irish moss w/ 15 min left, pitched yeast at 62  OG = 1048

9/01/2005 – Transferred to Secondary - .1020 gravity reading, 1 piece airlock

9/30/2005 - Don't think I liked the Nottingham yeast in this one, has an odd bread like character that I don't care for, might try again with a different yeast.

 


Irish Red Ale

9/04/2005 - Brew Day - Started with 1.5 gallons water, steeped grains until 170o, first boilover this time, pitched yeast at 63, OG = 1030

9/11/2005 - Transfered to secondary, 1010, 3 piece airlock

9/30/2005 - Kegged and bottled 3 x 22oz bottles and 12 x 12oz bottles, "Brewers Best" caps

10/20/2005 - I think this batch is infected, tastes more like a wheat beer, I thought at first that it might be oxidation, but the ones in the bottles taste the same, ended up dumping the keg, will keep trying the bottles to see if they get worse

 


Coopers Real Ale

 

Grains:            None

 

Extract:          3.75 lb Coopers Real Ale can kit

 

Other:             20 oz Corn/Priming Sugar

                        .5 lb light brown sugar

                        .5 lb table sugar

Yeast:             Included in the Kit

 

Notes:

9/10/2005 - Made kit according to directions (read a BYO article about how canned kits are good if directions are followed).  Heated 3 quarts of water to 150 and disolved sugars and extract kit.  Covered and heated for 15 min to pasturize and added to fermenter with ice.  OG = 1040

9/17/2005 - Transfered to secondary, 1006, 1 piece airlock

10/8/2005 - Kegged and bottled 6 x 22oz bottles and 2 x 12oz bottles, "Crest"caps

10/17/2005 - This brew turned out very cidery, I've heard about this on several posts, but I figured I'd try the right way like BYO suggested, will not use this much sugar in a brew again.  Ended up dumping most of the keg.

 


Cream Ale

10/17/2005 - Kegged and bottled 4 x 22oz and 5 x 12oz bottles, "stars cap"

10/28/2005 - Not much flavor, a little more body than I was shooting for, would probably use US-56 if I brewed again to get FG lower, little bit of a soapy flavor

 


Newcastle Clone

10/24/2005 - Kegged and bottled 6 x 12oz bottles "plain caps w/ 1 gold", tasted smooth and clean, nice malty smooth taste

 


Dry Hop IPA

 

Grains:            .75 lbs Dingemans Caramel Pils - 3 cups

                        .25 lbs Simpsons Med. Crystal (50-60 L) - 1 cup

 

Extract:          6 lbs Pale LME

                        1 lb Muntons Light DME

 

Hops:              1 oz Chinook - 60min

                        .5 oz Cascade - 10 min

                        .5 oz Cascade - 1 min

                        1 oz Cascade - Dry Hop - 7 days in secondary

                        

Yeast:             Safale US-56

 

Notes:

10/9/2005 - Brew Day - Started w/ 2 gallons water, steeped grains at 155 for 30 min, forgot irish moss, pitched yeast at 55, no OG on this one.

10/17/2005 - Transfered to secondary and added 1 oz Cascade

10/25/2005 - Strained into keg, bottled 5 x 22oz and 2 x 12oz bottles "gold caps w/ IPA written on top"

11/01/2005 - Tried a bottle and it tasted great, chilled in the freezer for 30 min, good carbonation, clean body with smooth mouthfeel, great hop flavor and aroma, could drink now if I wanted, but will try to wait.

 


 Peat Smoked Porter

 

Grains:            1 lb Black Malt

                        .25 lbs Simpsons Dark Crystal

                        .25 lbs Peat Smoked Malt

 

Extract:          6 lbs Munich LME

                        1 lb Dark DME

 

Hops:              1 oz Chinook - 60min

                        1 oz Willamette - 40 min

                        1 oz Willamette - 15 min

                        

Yeast:             Safale US-56

 

Notes:

10/18/2005 - Brew Night - First Full Wort Boil - Steeped grains in 1.5 gallons of water at 110 for 20 min and 155 for 20 min (I had to turn off the burner and go get propane).  Heated up remaining water on turkey fryer, combined with grain water, brought to a boil and added LME and DME.  Used wort chiller to chill wort, took 1 hour because I didn't spread out the coils after I got it, pitched yeast at 78 and added .5 gallons water.  Aerated wort with wisk and drill which worked great.

10/25/2005 - Transferred to secondary, 1 piece airlock

12/23/2005 - Too bitter from the cascade hops.  Hop bitterness definately overpowers the malt flavor of this beer, not at all balanced.  Would make again with different bittering hops, maybe Willamette for all.

 


Witbier

 

Grains:            None

 

Extract:          6 lbs Wheat LME

 

Hops:              1 oz Saaz - 60 min

                        1 oz Sazz - 1 min

 

Other:             1 oz Corriander - 10 min

                        1 oz Bitter Orange Peel - 1 min

                        1 cup Table Sugar

 

Yeast:             Safbrew T-58

 

Notes:

10/25/2005 - Brew Night - 6 gallons starting volume, heated until boiling and added Wheat DME.  Chilled much faster this time, maybe 20 min.  Poured wort into fermenter and realized that I had about 6 gallons so I added 1 cup sugar to up the OG, areated with a wisk until it broke on me.  OG = 1048

10/31/2005 - Transfered to Secondary, 1015, forgot to watch when I was transfering and ended up with quite a bit on the floor.

11/6/05 - Kegged, FG=1.012

12/19/05 - Not much left, very smooth flavor.  Corriander flavor didn't show through that much, will crack it with food processor next time, would definately make again

 

 


American Amber Ale

 

Grains:            .75 lbs Cara Vienna

                        .25 lbs Carapils

                        .125 lbs Special B

Hops:              1 oz Northern Brewer - 60min

10/31/2005 - Brew Night - started w/ 6 gallons, steeped grains 30 min at 150-160, added extract and brought to a boil (boilover actually), then added hops, pitched yeast at 75 and areated with a hand mixer for 1 minute, forgot the irish moss and yeast nutrient this time. OG = 1046

11/6/05 - Transfered to Secondary - SG=1.015

11/30/05 - Transfered to keg, very smooth flavor

12/9/05 - This beer was better young, not very clear, slight harsh aftertaste, dumped last few pints

11/21/05 - Transfered to secondary fermenter and added cinnamon, cloves, nutmeg, and potassium sorbate, SG=1.004

12/10/05 - Kegged and added 2 cans AJ concentrate, heated with 3 cinnamon sticks and a little honey

1/02/06 - Some sweetness gone, still very good, spices arn't really noticable

1/17/06 - Blew the keg, crystal clear at the end, tasted a little more dry at the end, will definately make again

12/04/05 - steeped grains 150-170 degrees for 30 minutes, added Irish Moss and 3 tsp. last 15 min
12/18/05 - Kegged and Bottled - 12 x 12oz bottles, 6 x 22oz bottles, Blue Star caps
1/2/06 - Tasted - had little to no carbonation, flavor is much too sweet, hopefully it will taste better when kegged
1/13/06 - Tasted - more carbonated, no head, flavor is getting better, malty and toasted flavor, still overly sweet, I think it is because I steeped the grains too high

12/10/05 - Brew Day - added gypsum at start of boil, had a small boil-over when adding hops, cooled to 75 in 20 minutes, had about 6 gallons of beer
12/18/05 - Transfered to Secondary
1/1/06 - Kegged and Bottled - 6 x 22 oz bottles, 6 x 12oz bottles, Hooch Brews caps
1/13/06 - Tasted a bottle, good carbonation, bitter taste, almost grassy, a bit harsh, will try again in a month or so
? - never turned out very good, I ended up dumping most of the keg, finishing gravity too high

Notes:

12/18/05 - Brew Day - steeped grains at 155 for 40 minutes, removed grains and brought to a boil, added hops and cans of extract, wort chiller leaked a little during cooling - one of the tube clamps wasn't tight enough, SG=1.048

1/7/06 - Transfered to Secondary - SG=1.020

2/3/06 - Kegged and Bottled - 6 x 12oz bottles, 6 x 22oz bottles, Crest caps, very smooth and toasty flavor, slight bitter bite in aftertaste

? - put in kegerator, very smooth beer, many people liked it

4/18/06 - Tasted - Tried one at cellar temps, extremely smooth, great balance, nice toasty/roasty flavor without any bite aftertaste, would definately make again.
